Just like Famous Dave's

I'm not exactly sure where it came from, but most of our food is cooked from scratch... it is partly due to a love for baking and it contributes substantial savings on the grocery budget. With that in mind, I have decided to share a "series" of recipes that I have created.  I should also clarify created... meaning I have taken recipes calling for a can of this, or a box of that to be made from plain ol' flour, sugar, etc.  Thereby knowing exactly what is in my food!!
The following recipe is a favorite that I worked hard to find/create!  It all started at Famous Daves!!  I love their cornbread muffins... and as with many restaraunt foods I have to come up with my own version at home!!  And my husband has declared these (EVERY time I make them)  just as good!!

So here is the first in this series:

Cornbread Muffins:

First I start by making a batch of Homemade "Bisquick Mix"  and store it in my freezer for future use, and it also serves then as a convenience food!

5 Cups Flour
2 Tablespoons Baking Powder
2 tsp. Salt
1/4 Cup Sugar
1/2 C. Dry Milk Powder
3/4 tsp. baking soda
1/2 Cup Butter

Combine Dry Ingredients.  Cut in butter with a pastry blender.  Store in a sealed container in the freezer.  This may be used in any recipe calling for Bisquick.

Cornbread Muffin Recipe:
1/4 Cup Butter softened
1/2 Cup Sugar
2 Eggs
1 T Vanilla
1 1/2 Cups Biscuit Baking Mix
1/4 Cup Yellow Cornmeal
2/3 Cup Milk

Preheat oven to 375.  Generously Grease 12 muffin cups... I don't like using paper liners for these as they stick to the bottom!

In a large bowl cream sugar and butter.  AStir in eggs and vanilla.  Slowly combine biscuit mix and cornmeal alternating with the milk.  Stir til just combined.  Batter will be lumpy.

Spoon batter into muffin tins.  Bake at 375 for 20-30 min. til golden.
